At Askili Orchard, we take an innovative approach to Georgian cuisine, rooted in tradition yet reimagined for today. Shaped over centuries at the crossroads of Europe and Asia, Georgia’s culinary heritage reflects the character of its people across its diverse regions, while transforming outside influences into something uniquely its own.
We carry this spirit forward in New York, imagining how the city might shape the next chapter of Georgian culinary craft. Our plates are lighter, elegant, and full of vibrant twists, with rosehip (askili) appearing in playful, unexpected ways. Every element, from sauces to preserves, is made in-house, prepared fresh and never frozen. Alongside a wide variety of dishes, our cuisine also features vegetarian, vegan, and gluten-free options — with our gluten-free Adjaruli Khachapuri quickly becoming a guest favorite.
Many of our dishes were originally created by Chef Maya Toria. A native of Abkhazia, a Russian-occupied territory of Georgia, she honed her craft in Tbilisi, Almaty, Dubai, and Hong Kong. Her cooking reflects both deep roots in Georgian tradition and a cosmopolitan perspective shaped by years in world-class kitchens, and continues to influence our menu today.
Askili Orchard is the long-held dream of founder Giorgi Papiashvili, who also co-owns Sipsteria, an espresso and natural wine bar with two Manhattan locations. Originally from Georgia, Giorgi has lived in New York since 2013 and brings his vision of creating a culinary space where the flavours of his home country meet the rhythm and appetite of the city.
At Askili, the result is unmistakably Georgian, yet distinctly our own.
